Intense cooked blackberry and raspberry, dark plum, oolong tea, faint dark chocolate finish and mallic acidity.
Grown in the highlands of North Western Uganda, this organic coffee comes from the White Nile Region within the Nebbi and Zombo districts. The cherries are picked at elevations ranging from 1,400 to 1,800 metres above sea level by a dedicated network of smallholder farmers—spanning 1,772 hectares across 7,980 hectares of certified organic farmland. These producers, organised through farmer groups and supported by Kawacom’s White Nile Wet Mill, bring a wealth of local knowledge and agricultural expertise to every step of production.
Cherries are carefully sorted, washed, and floated to remove defects before undergoing anaerobic fermentation. The fermentation occurs in airtight tanks under carbon dioxide, enhancing complexity and body. Following fermentation, the cherries are rinsed and slow-dried on traditional raised African beds, allowing for even drying and flavour development.
