Big, bold, like a bag of candy in every colour, as you would expect from anything processed like this. Dominating sweet cherry notes, in all forms, plum wine booziness and a real quality dark chocolate ganache finish.
This is a funky coffee, of a high quality.
Five years ago, Nestor Lasso and his brother Adrian took over their family farm in Colombia’s Huila region and shifted from traditional coffee farming to specialty coffee and experimentation. At ages 22 and 24, they partnered with Jhoan Vergara, another young coffee farmer, to create El Diviso, which combines their two family farms: El Diviso (Nestor and Adrian) and Las Flores (Jhoan). This collaboration allowed the trio to combine their expertise and improve coffee quality.
Three years ago, they teamed up with Cat and Pierre from CATA Export to experiment with fermentation processes and develop protocols to connect their coffee directly to the UK market. Although the process was challenging and costly, the result has been highly rewarding. Their coffee has won accolades in barista competitions across Europe, including first place at the Brewers Cup in Ireland and third in Austria.
Today, CATA Export and Finca El Diviso work as one team, and Nestor’s partnership with Cat exemplifies their commitment to working directly with farmers. This collaboration enriches both their knowledge and relationships, leading to economic benefits for the community. Through this model, many young producers like Nestor have been able to remain in coffee and build successful careers.
