This pink bourbon is a collaboration effort between three farmers, Edier Perdomo, Diego Horta and Freddy Correa.
Starting with a 24-hour pre-fermentation naturally in the cherry, followed by a 36-hour aerobic fermentation in bags. Rested on raised beds under the sun for approximately 15 days.
Semi-washed seems to sum up the character of this coffee well, it is clean and sweet with jammier flavours than you would expect of a fully washed coffee. A fruit basket of green apple, tangerine and plums and green tea.
