From just a 26 year old! What a coffee. Alejandra's pink bourbon has that extra complexity, full of really sweet stone fruit like peach and apricot, and acidity like a mix strawberries and pears, with blooming florals on the nose. 

This coffee is very clean.

STEP 1. COLLECTION AND SELECTION OF 100% RIPE CHERRY
STEP 2. OXIDATION PROCESS FOR 24 HOURS
STEP 3. ANAEROBIC FERMENTATION OF CHERRY WITH
PEEL IN PLASTIC BAG FOR 24 HRS TO LOWER TEMPERATURE
STEP 4. DEPULP PROCESSING WITH DEPULPING MACHINE
STEP 5. SECOND ANAEROBIC FERMENTATION IN PLASTIC BAG FOR 32 HOURS
STEP 5. THERMAL SHOCK PROCESS TO REMOVE MUCILAGE
STEP 6. WASH THE CHERRY WITH SPRING WATER TO REMOVE IMPURITIES
STEP 7. THE COFFEE IS TAKEN TO THE DRYER DEPENDING ON THE WEATHER FOR A MAXIMUM OF 8 DAYS, IT IS REMOVED 4 TIMES A DAY FOR HOMOGENEITY.

Alejandra Muñoz, a 26-year-old woman from Brussels-Pitalito, Colombia, is a rising figure in the coffee industry. Originally trained in carpentry, she learned the trade from her father but was more involved in household tasks due to cultural expectations. Her journey into the coffee world began when she met Jhonatan Gasca, a well-known coffee producer, who later became her husband. Together, they raised a family, and initially, they struggled financially, even selling hamburgers to make ends meet. Despite early challenges, their fast food venture grew, but Alejandra eventually had to close the restaurant due to health issues, which was a difficult decision for her.

Not wanting to stay idle, Alejandra decided to support her husband's coffee endeavors. The Zarza farm, where they work together, spans 6 hectares at 1,540 meters above sea level and produces specialty coffees. Through perseverance and family dedication, they have grown their farm, which now thrives on high-quality coffee production. Alejandra credits her husband for her entry into the coffee industry and for igniting her passion. She believes women play a crucial role in the success of the coffee industry and champions gender equality, which is a core value of their work.
